Sicilian Caponata needs no introduction, at least once in your life you will have tasted it or even just heard about it.

It is a typical dish of the Sicilian culinary tradition of which there are numerous variations, from Palermo to Chaina, from Trapani to Messina. Each of these recipes is different in detail, an addition that makes this recipe a true heritage of the Sicilian tradition. The ingredient that leaves its mark and that unites the different recipes is: aubergine.

Once upon a time there was Caponata. The origins of the dish

The origin of the recipe and the etymology of the word itself remains a mystery today. For some, the term caponata derives from “capone”, a dialect term to indicate dolphinfish, a fish that abounded on the tables of aristocrats, served with the sweet and sour sauce typical of caponata. The common people, not being able to afford such expensive food, would have replaced it with aubergines, which were certainly cheaper.

The ingredients were chosen and paired according to the rhythms of nature and the seasons, with vegetables coming from one’s own garden or that of a neighbor’s. You will therefore never find an official version of the caponata, because just as the saying goes: “Where you go, you find a custom”. By wandering around the island you can discover your favorite flavour!

The variations of the Sicilian Caponata

The recipe for Caponata alla Catenese

involves the use of yellow and red peppers and potatoes, which make its flavor sweeter and softer.

Caponata Palermo style

instead it involves the addition of green olives, tomato sauce and capers.

Caponata alla Trapanese

In addition to peppers, it includes the addition of carrots, and a note of crunchiness thanks to the use of dried fruit, in particular almonds.
