230 g of cane sugar
70 g of EVO oil
70 g of sunflower oil
125 g of cold water
12 g of baking powder
to taste of lemon zest or vanilla or cinnamon
1 pinch of salt
300 g of Agrisicilia white figs extra jam

This delicious vegan tart with shortcrust pastry by the master Montersino is ideal for those who follow a vegan diet, because it is absolutely free of animal derivatives, and for those who simply want a lighter tart without butter and without eggs, but with lots of taste… Today we stuffed it with a seasonal fruit, sweet and juicy white figs, but we can change and choose from the 60 flavors that Agrisicilia offers not only jams, but also creams, fruit, it will always be a perfect tart, but with the same pastry you can make biscuits, tarts, add chocolate drops for delicious cookies, a guaranteed success!

Instructions

1. Put all the ingredients in the mixing bowl, activate the blades for 90 seconds.

2. Remove the shortcrust pastry, finish it quickly on the work surface, wrap it in cling film and let it rest in the fridge for 60 minutes. Obviously it can be used even after hours, but also two days and will always remain plastic and soft.

Roll out the pastry between two sheets of parchment paper lightly dusted with flour to 7 mm, line the pan, preferably micro-perforated for more uniform cooking, or in the classic tart pans.
Stuff with the desired jam, today we used the Agrisicilia fig jam.
Cut regular strips and create the lattice, bake at 180° static oven for about 30 minutes.
Remove from the pan as soon as it is cold.
