Ingredients

3 eggs
50g flour
20 g sugar
20ml milk
1 small glass of rum
2 tbsp raisins
20g butter
to taste powdered sugar
100 g Sicilian blood orange jam I.G.P.

Kaiserschmarren, the sweet Austrian omelette has a consistency halfway between that of the classic omelette and that of a pancake, and is enriched with raisins soaked in rum.

The traditional recipe wants this sweet omelette to be accompanied with red fruit jam, to make it more Sicilian we have added a few more touches, our PGI Sicilian Blood Orange Marmalade!

Instructions

1. First, soak the raisins in the rum for at least 10 minutes

2. Divide the eggs into yolks and whites, then whip the latter until stiff and set aside.

3.Work the egg yolks with the sugar with a whisk or a fork, then add the flour and milk.

4. Add the whipped egg whites and mix well.

5. Drain the raisins and add them to the other ingredients.

6. Heat a knob of butter in a pan.

7.Pour the batter and cook for a few minutes, then turn the omelette: if it breaks it doesn't matter, it's served in irregular pieces!

8. When the sweet omelette is cooked, cut it into small pieces, sprinkle it with icing sugar and serve it accompanied by a small bowl with blood orange marmalade.
