q.b. seed oil for frying eggplant
4 basil or mint leaves

Instructions

1. Fry eggplant stripped of skin and chunks, drain in a colander so that they lose excess oil.
2. Wash and cut cherry tomatoes in half, put in pan with garlic and oil and cook, when softened, add eggplant , season by adding oregano, basil and salt and finally add chopped tuna.
3. Cook the pasta according to the time schedule indicated on the package and stir-fry a couple of minutes before bringing to the table
