Ingredients

Shortbread ingredients:
250 g of 00 flour
100 g of icing sugar
150 g of butter
80 g of whole eggs
2 g of baking powder
1 pinch of salt

500 g of cottage cheese
120 g of icing sugar
1/2 vanilla pod
250 g of Agrisicilia pistachio cream

The Tart with ricotta and pistachio spreadable cream, a delicious tart with ricotta and lots of Agrisicilia pistachio spreadable cream that remains soft when cooked thanks to a little trick.
In fact, it will be enough to freeze a disk of cream the circumference of the pan to place on top of the ricotta filling and then decorate and cook, during cooking the spreadable cream will melt while the pastry will cook.

Instructions

Shortbread preparation
Put all the ingredients in the planetary mixer and mix quickly with the leaf, collect the pastry, finish it and form a loaf by covering it with plastic wrap before storing in the fridge. Ideal would be a stop in the fridge for 12 hours, but it can also be used after four hours.

Filling preparation
Sift the ricotta which must be dry, add the icing sugar and sift, mixing well.

Preparation of pistachio cream
Form a disc of the right circumference on parchment paper and freeze so that it does not dry out while cooking, remaining soft.

Tart assembly
Roll out the pastry and cut a disc of the circumference of the pan, place it on the bottom and form the edges with strips. If the pastry becomes soft, spread it between two sheets of parchment paper dusted with flour and leave in the freezer. Place the ricotta filling and level. Place the pistachio cream disc on top of the ricotta, form the strips.

Baking
Bake at 180° in a static oven for about 30 minutes.
