Zibibbo Secco Al Qasar Bio

Zibibbo Secco Al Qasar DOP Bio presents a straw-yellow color with golden highlights to the eye. The nose releases aromas of pear and yellow-fleshed fruit pressed together by fragrant floral hints of orange blossom and elderflower and hints of Mediterranean scrub. The sip is fresh and pleasantly savory supported by excellent taste-olfactory consistency. Pleasant almondy finish. At the table it pairs well with cheeses and vegetarian dishes as well as tasty seafood preparations. Try it with smoked swordfish tartare and mango.

Rallo’s Zibibbo Secco Al Qasar DOP Bio is a 100% Zibibbo-based organic white grown in the Alcamo area in the province of Trapani. The south- and southeast-facing rifrimento vineyards are developed on medium-textured sandy soils at an elevation of about 250 meters above sea level. The harvest carried out in August was done by hand in crates of about 15 kg. In the winery, white vinification included alcoholic fermentation in stainless steel at a temperature of 15-16°C protracted for 8 days. Aging was 6 months in stainless steel plus an additional month in bottle.
