Tasting notes

View: intense golden yellow with amber reflections

Smell: with pleasant aromatic notes of candied citrus fruits, yellow-fleshed fruit and sage

Taste: sweet but not cloying, thanks to a good acidity; with pleasant notes of candied orange, dried apricots and dates

Pairings: ideal pairing with Sicilian dry pastries and fruit tarts, it also goes perfectly with herbal or long-aged cheeses

Production area: south-eastern Sicily, territory of the municipality of Rosolini (SR) Contrada Ritillini

Training system: Counter-espalier with Guyot pruning

Planting density: 5,000 vines per hectare, with yields of around 80 quintals/ha

Harvest: Manual harvesting of the grapes in the first ten days of August and drying on naturally ventilated racks

Vinification: vinification in white, with fermentation in temperature-controlled steel tanks

Refinement: maturation in small barrels for 5 months and refinement in bottle for 3 months

Alcohol content: 12% vol
