125 g semolina
125 g of 00 flour
1 egg
4 g of powdered sugar
80 g of lard
20 g of marsala
1 pinch of salt

Cassatelle is a traditional Sicilian dessert. These are small cupcakes filled with ricotta cream, sugar and chocolate chips or candied fruit.

Cassatella’s base is a crisp and crumbly short pastry, food blogger Antonella Audino, has varied the recipe by filling them with our Sicilian Orange, Lemon and Mandarin Marmalade!

Instructions

1. Place all ingredients in planetary mixer with the leaf and knead until the dough is compact , if necessary add a tablespoon of water , collect the dough form a loaf and let rest between two plates for about thirty minutes
2. Roll out the dough, which should be very thin, and cup with a 10-cm circle
3. Place in the center of the circle a teaspoon of Agrisicilia orange marmalade close and seal first by pressing with a fingertip then with the tines of a fork .
4. Transfer cassatelle to baking pan on baking paper or nonstick baking sheet and bake at 180° static for about 15 minutes; they should come out well light.
5. Place a teaspoon of Agrisicilia orange marmalade in the center of the circle, close and seal first by pressing with a fingertip then with the tines of a fork.
