Ingredients

200ml milk
80g 00 flour
100 g walnut kernels
1 egg
50 g sugar
1 teaspoon baking powder for desserts
30g butter
150 g mulberry jam

Traditionally, the pancakes are served with maple syrup, but they can also be accompanied by melted chocolate or, as in this case, with jam of your choice: I have chosen to use the Agrisicilia Black Mulberry Extra Jam, with a inebriating, with all the flavor of fresh fruit!

Instructions

1. First, shell the walnuts and reduce the kernels to flour in a mixer.

2. Divide the egg into yolk and egg white, then beat the egg white until stiff and set aside.

3.Work the yolk with the sugar with a whisk or a fork, then add the milk and the flour and mix.

4. Also add 70 g of walnut flour and the baking powder, finally add the whipped egg white and work from the bottom up so as not to disassemble the mixture.

5. Melt a knob of butter in a pan and then pour a little dough (a level ladle), which will be the first pancake.

6. When bubbles start to appear on the surface, you can turn the pancake to cook it on the other side.

7. Proceed like this with all the pancakes, adding a little butter to the saucepan from time to time and taking care to always keep the flame medium-low so as not to burn the surfaces of the pancakes.

8. Arrange the first pancake on a plate, then sprinkle it with a little jam and place another pancake on top.

9.Proceed like this forming portions of 3-4 pancakes, then complete with a little jam and the leftover chopped walnuts.
