Instructions

1.Insert all the ingredients in the planetary mixer and mix quickly with the leaf, collect the shortcrust pastry, finish it and form a loaf, covering it with plastic wrap before storing in the fridge. Ideal would be a stop in the fridge for 12 hours, but it can also be used after four hours.

2. Roll out the pastry between two sheets of parchment paper lightly dusted with flour to a thickness of no less than 7 mm to prevent it from breaking easily.

3. Stop in the fridge, cut strips of equal size with a pizza cutter for a perfect cut and spread the jam with a teaspoon and without exaggerating.

4. Roll up the first strip on itself and place it in the center of a 20 cm pan with a hinged circle lined with parchment paper, then gradually spread the others and roll up around the central one.

5.You get your hands dirty, but that's normal, rinse often to avoid dirtying the pastry.

6.Complete the rounds, for this pan almost all the pastry will go away.

7. Bake in a preheated oven at 200° for about forty minutes, taking care a little more than halfway through cooking to place a sheet of parchment paper on top so as not to brown too much from the jam.

8. The last 10 minutes in a convection oven.
