55% dark chocolate 175 g
Whole milk 125 g
Liquid fresh cream 250 g
Icing sugar 30 g
Extra apricot jam 230 g

For decoration
Extra dark chocolate flakes q.b
Mint leaves

The Sacher Mousse is a soft dark chocolate mousse with a heart of Agrisicilia apricot jam, delicious and delicious, perfect for a romantic and passionate dessert after dinner.

Instructions

1. Chop the dark chocolate with a knife and pour it into a large glass bowl.

2. Heat the milk in a small saucepan, adding the sifted sugar a little at a time, stirring constantly with a whisk.

3. Once it reaches the boil, pour the milk into the bowl with the chopped chocolate and mix well with the whisk until you obtain a thick and smooth cream. Leave to cool out of the refrigerator.

4. Whip the liquid fresh cream and add to the chocolate cream in three times, mixing delicately with a spatula, from bottom to top.

5. Cover the bowl with plastic wrap and place in the refrigerator to rest for three hours.

6. Assemble the cups as follows: fill two piping bags, one with the chocolate mousse and one with the extra apricot jam.

7. Make a first layer of mousse up to a third of the cup, continue with a rich layer of jam and finish with another mousse until the cup is filled.

8. Decorate with extra dark chocolate flakes and mint leaves.

9. Place the two bowls in the fridge until serving.
