Ingredients

Gluten free buckwheat biscuit ingredients
180 g of buckwheat flour
100 g of rice flour
140 g of cold butter cut into small pieces
80 g of coconut or cane sugar
1 whole egg
1 pinch of salt
to taste of vanilla
to taste of lemon zest

Today we present “Ox-eye biscuits with buckwheat” a special recipe of biscuits prepared with buckwheat and rice flour, ideal for those who follow a gluten-free food system.
A rustic and pleasant taste, the addition of rice flour and brown coconut sugar make them truly special and are ideal for breakfast and for many tasty snacks.
The filling with AgriSicilia extra strawberry jam makes them irresistible and it will be hard to resist.

They can be thin and crunchy for filling or thicker for dunking.

Instructions

1. Sift the flours, add the sugar, salt and vanilla in the centre, place the cold butter into small pieces and sand quickly, finally add the egg and knead quickly.

2. The dough will be soft, wrap in plastic wrap and place in the fridge for at least thirty minutes.

3. Roll out the pastry between two sheets of parchment paper, dusting with rice flour to the desired thickness.

4. Cover with circles and place on the tray then cook at 180° ventilated for about fifteen minutes.

5. Particular attention must be paid during cooking because the dark color can lead to errors.

6. Remove the very cold biscuits and fill with your favorite jam, today we love strawberries.
