Ingredients

- 300 g of flour 00 or 1
- 100 g of cold butter cut into small pieces
- 120 g of sugar
- 1 whole egg
- 1/2 juice of a lemon
- 1 lemon zest only
- 10 g of baking powder
- 1 pinch of salt
- to taste lemon jam
- to taste granulated sugar for finishing
- to taste powdered sugar for finishing

Delicious soft and crumbly biscuits with a crunchy crust and a lemon and ginger jam filling which gives the biscuit an incredible taste and freshness, just that of freshly picked Sicilian lemons that AgriSicilia transforms in its entirety while preserving aroma, taste and freshness.

Instructions

- Place the cold but slightly soft butter cut into small pieces and the sugar in a bowl, whip with electric whisks. Stirring constantly, add the egg, lemon peel, lemon juice and finally the flour and baking powder

- The dough immediately after kneading it is soft but does not stick to your fingers... Leave the dough in the fridge for at least thirty minutes

- After the indicated time form balls the size of a walnut, roll in granulated sugar and then in icing sugar to give the cracked effect and place the balls in a baking tray on parchment paper

- With a teaspoon press in the center creating a small cavity where to insert a teaspoon of lemon jam, but of course you can use the flavor you prefer. Bake in a preheated oven at a temperature of 180°C for about 10 minutes, until small cracks form on the surface and they begin to brown slightly.

- As soon as they are taken out of the oven they are very soft, wait for them to cool completely before removing them from the pan and tasting them. They can be kept for a long time in a tin box.
